Mark O'Callaghan spent come considerable time buried in the wine giant formerly known as Hardy's, which is not such a bad place to hone ones sparkling winemaking skills. As Senior Winemaker and Winery Manager at Yarra Burn, Mark had plenty of contact with the fizzy stuff, and with the resource of the legendary Ed Carr... well, not a bad pedigree. Today, Mark consults near and far, but can't resist playing with small parcels of fruit from sites that he knows and loves.

Clare Valley is located in 120km north of Adelaide and is made up of five sub regions: Auburn, Sevenhill, Watervale, Polish Hill River and Clare. In its 160 year history, Clare Valley has become most known for its Rieslings. Its moderate continental climate; warm to hot summer days moderated by cooling afternoons and nights, give the vines respite from the heat and allow them to slowly ripen and add complexity. An essential factor to the intensity, structure and balance of aromatic vines such as Rieslings.

The next Generation of the Lloyd family (Coriole) planting their flag in the Vale. A new project from brothers Duncan and Peter Lloyd, Dune wines sees them step out from the shadow of Coriole wines. Sourcing fruit from a single vineyard in the Blewitt Springs sub-region of Mclaren Vale. Organic in conversion, this sandy vineyard has been completely re-imagined since being purchased by the brothers in 2009. Planting and grafting over southern Mediterranean varietals has seen them create a unique range of blends alongside some classic and so2 free shiraz. 

Bursting with plummy fruit flavours and a peppery, dry finish this Shiraz is medium bodied. Also matured with a mix of old and new oak it is complex, flavoursome and satisfying. Careful cellaring will reward

A creamy, easy drinking stout. Full bodied with notes of cacao, coffee, chocolate, and dark fruit. All of which are a decadent product of the cacoa paste, plethora of roasted malts, and Slovenian hops used alongh with a lengthy time of cold conditioning. Perfect for these cooler days. Winter is coming so put this in your mouth.

Made with flavour and sessionability in mind our extra pale ale is bright and refreshing with a hefty hop presence. Tropical & fruity notes dominate a floral palate here while a subdued bitterness and rounded malt presence balance this refreshing yet flavour-packed little number. Best enjoyed with mates, sunshine, and good vibes. 

Mixed Fermentation Sour Ale - 3.4%
This beer starts out as our traditional no-boil mixed fermentation Berliner Weisse style beer with live Lacto souring bacteria and Brett yeast. We then ferment it on mango and passionfruit for a further three months. A super refreshing fruit filled experience with some funk from the Brett yeast. 

Barrel Aged Farmhouse Ale - 6.4%
Continuum is the follow up to the first beer we ever brewed, Foundation. A farmhouse ale open fermented with a Belgian Saison yeast strain, then aged in wine barrels with Lacto souring bacteria and Brett yeast for 10 months. Very dry, highly carbonated with pleasant acidity and fruity and spicy yeast esters. 

Grisette - Pale Belgian Ale - 3.8%
In the style of the historical beers from Belgium’s southern Hainaut province that were originally brewed to quench the thirst of local miners. Light body with balanced floral and spicy hop character and yeast driven fruity esters. 

Belgian Tripel - 8.4%
Tripels are a strong pale beer that have been brewed in Belgium since the 1930’s. The name originates from when breweries marked their beers with X’s according to their strength.Those marked with three X’s being referred to as a Tripel. Threefold has complex yeast derived flavours from an initial open fermentation and a second fermentation in the can. This beer is highly carbonated just like the original Belgian Tripels 

Capi Sparkling Water is bottled at the source in Victorian Highlands. After rising 250 metres to the surface through mineralised rock, the water is naturally carbonated and bottled over the spring; capturing the unique and light mineral taste is captured at its best 

Capi Soda Water is purified carbonated water. A distinctly straightforward flavour, used to dilute almost any liquor or as a refreshing bubbly drink on its own

Bold and beautiful, this premium, Australian tonic water uses raw, unrefined cinchona bark to create an earthy, rich bitterness that simply can’t be found elsewhere. Emboldened by bold strokes of orange peel and fragrant rosemary, we finished this masterpiece with a pinch of sea salt, because sometimes that’s what you do.

At 4.0g of sugar/100ml, this all-natural tonic water is on the dry side, containing approximately half the sugar of a regular tonic.

The natural, earthy tones of the cinchona bark and delicate notes of rosemary make for beautiful pairing with herbaceous or citrus-led gins 

We combined the juice of white grapefruit with an extremely high-quality holy basil extract for a layered, unique and exceptionally refreshing soda. The tart, dry juice of Cuban white grapefruit meets the front palate before falling away into peppery, herbaceous top notes of holy basil.
